Meet EDRD Pro member Charlotte Carlson, RDN (She/Her/Hers)! When she’s not playing with her dog, taking care of her plants, or searching for the best tacos in town, you can find Charlotte working at a nutrition center on a college campus. Here, she serves individual clients as well as the broader community.

What’s your favorite meal?

Any and all types of tacos!

What’s saving your life right now?

My dogs, my plants, and coffee!

What would you say is one of the most valuable skills you’ve developed in your career?

Each client’s journey is going to look different and that’s awesome! So learning to follow the lead of the client and their lived experience to inform and adapt my support/approach to best fit them!

If you didn’t do what you do professionally, what other job or field would you have pursued, and why?

I think I would have really enjoyed going the therapist route, still in the eating disorder space. If I were to step outside of the eating disorder field – possibly something in the events/wedding industry or something in the food industry that involves lots of tasting new foods!

What’s something that most people don’t know about you?

I was a competitive Irish dancer for 15+ years of my life!

Where do you work?

I work at a nutrition center on a college campus though we are open to the entire community, not just those affiliated with the college. I work mostly with eating disorder/disordered eating clients but do see a handful of other client types as well as some cooking classes and presentations.

What do you enjoy most about what you do?

I love helping clients figure out how to live more freely around food, movement, and their bodies! It’s hard work, but seeing clients find that freedom is so worth it and helping clients through an incredibly challenging time in their life is amazing!

How did you find the non-diet, Intuitive Eating, and Health at Every Size® approaches, and what inspired you to adopt these frameworks?

Introduced to Intuitive Eating and eating disorders in my grad school program and dietetic internship. More intensely introduced to all of these as I started getting into eating disorder work and following more and more RDs/therapists/activists in this space on Instagram – from there really dove into the books, research, and education.
